I Pinned this scrumptious looking cake a couple of days ago. I was SO excited when it went kind of "viral" after I pinned it. My email box was blowing up with re-pins and likes! Funny how something like that can give you a thrill. Grand total so far = 131 Repins and 20 Likes.
I didn't have this on my radar to make right away, but I walked into the grocery store this afternoon and found Florida strawberries BOGO! I pulled up the Pinterest app on my phone and made sure I gathered the rest of the ingredients needed. Nothing weird or unusual, so I was happy!
This cake was yummy. The inside reminded me of a cake donut. I didn't really taste the strawberry, but the cake itself has a good flavor. The glaze on top was tangy and the lemon overpowered being able to taste the strawberries. I left out the lemon zest because I didn't feel like buying a lemon just for some zest. I used a food chopper to dice the strawberries and I think it made them too "liquidy". Next time, I will dice them by hand so they don't get mushy. I'd make it again!
